Trimani’s artisanal cuisine is created under the direction of certified chef de cuisine Domenic Colacci. Trained in Germany and Switzerland, Colacci has travelled through Australia, Italy, Thailand, Mexico, the US, and Canada to understand what takes a dish from good to great. He specializes in European-style cooking that combines the best of old-world traditions and fresh, high-quality North American ingredients sourced daily. Colacci believes that recipes should be simple, allowing balanced flavours to blossom and transform the palette. That’s the philosophy Colacci lives by at Trimani.
